second helping blueberry dumplings

As a young girl, I developed a love of blueberries from the older women in my family. I looked forward to helping them pick blueberries at the local blueberry farm. We would come home, either to my grandmother's or to our home, with our bounty! While picking I would try to guess whether we would make a pie, a cake, a cobbler, or blueberry dumplings...what fun! Since this recipe was the fastest to make we often would use our berries the first time to make drop dumplings. In addition there was no air conditioning in those days so that was another deciding factor.

Ingredients For second helping blueberry dumplings

  • 2 c
    blueberries
  • 1 c
    sugar
  • 2 c
    hot water
  • 1 Tbsp
    butter
  • 1 tsp
    fresh lemon juice, optional
  • DROP DUMPLINGS
  • 2 c
    flour
  • 1 tsp
    sugar
  • 2 tsp
    baking powder
  • 3/4 tsp
    salt
  • 1 tsp
    cinnamon, optional
  • 1/2 c
    crisco or lard
  • 6-8 Tbsp
    milk

How To Make second helping blueberry dumplings

    Use a wide 3-4" tall pan. Add butter, sugar, blueberries, and hot water.

    Stew the berry mixture by bringing to a boil.
  • 3
    Drop dumplings by heaping tablespoons into the boiling stew.
  • 4
    Lower the heat, cover, and allow steam to cook dumplings 15-25 minutes depending on size of dumplings.

    Making the dumplings...I like to do this in advance of stewing the berries.

    Whisk together all dry ingredients in medium bowl.

    With a pastry brush or meat serving fork, cut in Crisco or lard until you get coarse crumbs.

    Slowing add tablespoons of milk stirring with a spoon or even use your hands until a soft ball of dough forms.

    May use a 1/4 cup measuring cup to partially fill and pour into boiling berry mixture.

    When last of dough has been dropped into boiling berry mixture, lower the heat, cover and steam the dumplings anywhere from 12-20 minutes depending on the size of the dumplings.

    Serve while still hot. My family loves to pour heavy cream over it! And of course, ice cream is always good too!
