This makes an ambrosia that is a favorite at family gatherings. It has to sit at least overnight and the last ingredients are added 2 hours before serving, hence the long cooking time.

Ingredients For rosamarina salad

  • 1 lb
    orzo pasta
  • 2 can
    chunky pineapple
  • 2 can
    mandarin oranges
  • 2
    eggs
  • 3/4 c
    sugar
  • 1 Tbsp
    all purpose flour
  • 10 oz
    jar maraschino cherries, drained
  • 8 oz
    frozen whipped topping, thawed

How To Make rosamarina salad

  • 1
    Cook the pasta according to box directions. Drain, rinse with cool water and drain well.

    Drain pineapple and oranges, reserving juice. Refrigerate drained fruit.

    Combine fruit juices, eggs, sugar and flour in a saucepan and bring to a boil, stirring frequently.

    Add sauce to cooled orzo, mix well. Refrigerate orzo 8-10 hours or overnight.

    Two hours before serving mix in the reserved fruit, cherries and whipped topping. Refrigerate until serving time.
