A lite and fluffy orange dessert that has been enjoyed for many years. My ex mother in law gave me this recipe in the 1970's.

Ingredients For opal salad

1 cancrushed pineapple in own juices

1/4 csugar

1 boxlarge box of orange jello

1 lbsmall curd cottage cheese

2 candrained mandarin oranges

3 cmini marshmellows

1medium tub of cool whip
How To Make opal salad

1Bring pineapple with juice and sugar to a boil.

2Remove from heat and add jello, stir until desovled, then add cool whip and cottage cheese and 1 can of mandarin oranges (drained).

3chill for 30 minutes in frig, remove and add marshmellows. Stir in and add remaining can of drained oranges on top in a clever pattern.
