My family loves this cobbler, warm, with a scoop of homemade Vanilla ice cream... but Breyer's ice cream is good, too! It is also good with just a splash of cream.

Ingredients For nectarine cobbler

  • FILLING
  • 1 c
    sugar
  • 2-3 Tbsp
    cornstarch, depending on how juicy the fruit is.
  • 6 to 8 c
    fresh nectarines, chunked (no need to peel)
  • 1 Tbsp
    lemon juice
  • CAKE
  • 2
    eggs, slightly beaten
  • 1 c
    all purpose flour
  • 1 c
    sugar
  • 1/2 c
    butter, melted
  • 3/4 - 1 tsp
    almond extract

    Preheat oven to 375º F.

    For Filling: In a large saucepan, blend sugar and cornstarch together; stir in prepared fruit and lemon juice. Cook over medium heat, stirring constantly, until thickened. Pour into a 9x13 pan. Top with cake batter.

    For Cake: In a large bowl, combine all ingredients and mix just until blended, and flour is absorbed. Pour evenly over fruit in 9x13 pan. Bake at 375º F. for 30-40 minutes, or until filling is bubbly and top is golden brown. Serve warm with whipping cream or ice cream.
