My mother-in-law, Stella Curry, taught me so much about cooking. My own mother, Virgie Osborne, was a great cook too. I have always had some big shoes to fill. Mrs.Curry had 16 children so she needed some quick recipes. Here goes!

Ingredients For lazy man's cobbler

  • 1 stick
    butter or margarine
  • 1 c
    self rising flour
  • 1 c
    granulated sugar
  • 1 c
    evaporated milk
  • 1 can
    fruit pie filling or large can peaches, drained

How To Make lazy man's cobbler

  • 1
    Preheat oven to 350. Spray a 9x13 pan with nonstick spray. Place one stick of margarine or butter in pan and place in oven until melted.

    In large bowl whisk together flour, sugar and milk into a smooth, thin batter. Remove pan from oven and pour batter into melted margarine/butter.

    Stir fruit pie filling or canned peaches into batter. Bake 35-45 minutes until top in golden brown. Serve warm with ice cream, whipped cream or cold milk. Then go back for seconds, thirds, whatever.
