Adapted from the July 15, 1941 edition of Wisconsin Energy Cooperative Magazine When days are hot and appetites wane, try this new frozen salad in your electric refrigerator. It may be made without the salad dressing if your family prefers it that way, and you may use any fruits you have on hand or a can of fruit cocktail can be pressed into service. How many can remember when we used "ice boxes" because the new electric refrigerators were so costly, or possible not yet available in your area ?

Ingredients For frozen walnut salad

  • 2
    (3 oz.) cakes of cream cheese
  • 1 tsp
    salt
  • 1/2 c
    mayonnaise
  • juice of 1 lemon
  • 1/2 c
    crushed pineapple drained free of juice
  • 2 md
    sized bananas—sliced
  • 1/2 c
    broken walnut kernels
  • 1/2 c
    maraschino cherries in halves
  • 1 c
    whipping cream
  • crisp salad greens, whole walnut kernels and some fresh fruit for garnishing

How To Make frozen walnut salad

    Mix cream cheese with salt, mayonnaise, and lemon juice; then add crushed pineapple, sliced bananas, broken walnut kernels, and maraschino cherries.

    Fold in cream that has been whipped and pour into cold dry freezing tray. Set refrigerator control at coldest position so that salad may mellow before serving. (This step not necessary in modern refrigerators)

    To serve, arrange whole mold or slices of it on a bed of crisp salad greens; garnish with whole walnut kernels and fresh fruit, such as sections of oranges, grapefruit, or fresh strawberries.
