Ingredients For blackberry cobbler

  • 8 c
    fresh or frozen blackberries
  • 1/4 c
    tapioca
  • 1 c
    sugar (or 1/2 splenda 1/2 sugar)
  • 1 pinch
    salt
  • 1/2 sm
    lime, squeezed
  • 1 c
    all purpose flour
  • 3/4 c
    sugar ( or 1/2 splenda 1/2 sugar)
  • 1/2 tsp
    baking powder
  • 1 c
    shredded coconut
  • 1/4 tsp
    salt
  • 1/2 c
    chopped pecans
  • 1/2 c
    softened unsalted butter
  • 1 lg
    egg

How To Make blackberry cobbler

  • 1
    toss together blackberries, tapioca, 1 cup sugar, pinch of salt and juice of half a lime. Pour into a flat baking dish

    Blend together flour, 3/4 cup sugar, baking powder, coconut, salt and chopped pecans. knead in butter. Blend in beaten egg

    spread topping on top of berries and bake 45 min at 375 degrees. serve warm with ice cream
