I love recipes that use jam because I make way more than I can use! I made these bars 4 times in one week they are sooo good!

Ingredients For becky's parfait bars

  • CRUST:
  • 1 box
    white cake mix+1/4 cup flour
  • 1 lg
    egg
  • 3/4 c
    butter, softened
  • 1 c
    blueberry or blackberry jam
  • FILLING:
  • 2-8 oz
    cream cheese, softened
  • 2 lg
    eggs
  • 1 c
    vanilla yogurt
  • 1/2 c
    powdered suger
  • TOPPING:
  • 1 c
    fresh or frozen blueberrys
  • 1 1/2 c
    granola w/o raisins

How To Make becky's parfait bars

  • 1
    Mix cake mix+flour, egg, and butter until well blended. With floured fingers press into a greased 9x13 pan. Bake 350 degrees for 15-18 min. Microwave jam for 30 seconds, stir and spread on baked crust.

    Beat cream cheese, eggs, yogurt, and powdered sugar one at a time until well blended; then beat for one minute. spread over the jam.

    Sprinkle with blueberrys then granola and press lightly into filling. Return to oven and bake for 50-55 minutes or until set. Let cool completely and refrigerate before serving. Store in the refrigerator.
