My Beautiful Grandma's Classic Fruit Cobbler recipe inspired me to create this recipe. I made a few changes to the ingredients, and instead of the oven, I was able to cut the time in half using our grill. My family and friends love it, and hope you will too. Plus added heartfelt thanks to my Grandma Mae!! note**also taste great with different fresh fruit combinations, like peaches, mangoes and blueberries or apples, pears and figs

Ingredients For back-porch grilled grandma’s fruit cobbler

  • 1 1/4 c
    all-purpose baking and biscuit mix
  • 1/2 c
    sugar
  • 1/4 tsp
    ground cinnamon
  • 1/2 c
    buttermilk
  • 2 Tbsp
    vegetable shortening
  • 2 Tbsp
    butter, softened
  • 1/4 c
    packed brown sugar
  • 2 c
    fresh plums, pitted and quartered
  • 2 c
    fresh pineapple, cut into chunks
  • 2 c
    fresh strawberries, stems removed and cut into halves
  • 8 oz
    1 tub, frozen whipped topping, thawed

How To Make back-porch grilled grandma’s fruit cobbler

    1.) In a medium bowl, mix biscuit mix, sugar, cinnamon and buttermilk; beat 30 seconds, or until blended; set aside.

    2.) Heat gas or charcoal grill to medium heat. Add vegetable shortening and butter into a 9 to 10 ¼ -inch size cast iron skillet over medium heat of grill until melted. Stir brown sugar into melted mixture until blended. Stir fruit into sweetened melted mixture until fruit is coated and blended into sweetened mixture in heated skillet.

    3.) Spoon large spoonful’s of biscuit batter mixture evenly over top of sweetened fruit mixture in heated skillet. Cover over top of skillet mixture loosely with a large sheet of heavy-duty foil and cover grill.

    4.) Grill for 12 to 15 minutes, or until tooth pick inserted into biscuit batter mixture comes out clean and edges are lightly browned, turning and rotating skillet every 3 to 4 minutes, to prevent burning edges. Remove from grill and let set for 5 minutes.

    5.) Spoon grilled fruit cobbler into 4 large or 6 smaller bowls and top each with a dollop of whipped topping and serve warm.
