Don't ask me who dubbed this Possum Pie or why. But putting chocolate pudding, cream cheese, pecans, and whipped cream together in a pie shell... who cares what you call it besides to die for? This recipe dates from the 1950s. Interestingly, Possum Pie more recently morphed into a somewhat similar dessert known as "Better Than Robert Redford."

Ingredients For not really possum pie

    9" pie shell
  • 1/4 c
    ground pecans
  • 2
    (3-oz.) packages cream cheese
  • 1/2 c
    powdered sugar
  • 1 pkg
    instant chocolate pudding
  • 1 pkg
    instant vanilla pudding
  • 2 c
    cold milk
  • 1/2 tsp
    vanilla extract
  • 1/2 pt
    whipping cream, whipped
  • 12
    pecan halves

How To Make not really possum pie

    Roll out pastry on 1/4 c. ground pecans before baking, or use store bought pie shell.

    Cream together powdered sugar and cream cheese until smooth. Set aside.

    Mix pudding mixes with milk and vanilla extract. Beat on low speed for two minutes.

    Spread cream cheese mixture on cooled pie shell and pudding mixture over cream cheese layer.

    Top with whipped cream. Arrange pecan halves evenly over whipped cream.

    Refrigerate until ready to serve.
