I made this pie for my special sweetheart for Valentine's Day, my husband. I actually made two desserts but this is the one he seemed to have enjoyed the most. It is a combination of whole cranberries mixed with Blueberries,& a hint of lemon juice & zest. I even cut out a heart in the middle of the pie for the steam to escape as it cooked. It is a deep dish pie, so the little shallow frozen deep pie shells probably will not work for this pie. This is ONE OF the best ways to say I LOVE YOU, with the creation of a dessert that he really loves, combined with a special Valentine's Dinner

Ingredients For cran-blueberry i love you pie

  • 1 pkg
    refrigerated pie crust (double)
  • 2 can
    blueberry pie filling (21 oz. each)
  • 1 can
    whole berry cranberry sauce
  • 2 tsp
    lemon extract
  • 1 Tbsp
    lemon zest
  • 1 Tbsp
    lemon juice
  • 2 tsp
    butter extract
  • 1 Tbsp
    butter
  • 2 Tbsp
    corn starch
  • 1 Tbsp
    water or enough to make a thin paste
  • 1 lg
    egg plus 1 tbs water beaten together
  • sugar crystals (optional)

How To Make cran-blueberry i love you pie

    PREHEAT OVEN TO 425 DEGREES F. Line a shallow pan with aluminum foil and set aside till needed.

    UNROLL & arrange one of the crusts in the bottom of a deep dish pie plate.

    Add both cans of the blue berry pie filling and whole berry cranberry sauce to a medium size bowl.

    Zest one lemon and add juice and zest to filling in bowl.

    Now add both the butter and lemon extract to the bowl and stir to blend together.

    Combine corn starch and 1 tablespoon of water together in a small bowl to form a smooth paste. Mix and add to pie filling, and stir into pie filling until completely blended.

    Pour filling into pie shell.

    Dot with butter.

    Add top crust and seal top crust together with bottom crust. Cut slits into top crust to allow steam to escape as pie bakes. I also cut a heart shape in middle of top crust.

    Crack and egg into a small bowl, add 1 tablespoon of water, and beat to blend together.

    Now brush egg wash over top crust, and then sprinkle with white decorators sugar if desired. Bake in preheated 425 degrees F oven for 50 minutes or until crust is golden brown. Remove from oven and cool completely before serving.
