Most Lemon Bar recipes have the same base ingredients, it's all a matter of personal taste. This recipe was my grandmother's recipe. Not to tart, not to sweet. It's been a never fail, always gone recipe for me over the years. I have also made this gluten free by using oatmeal flour in the crust and 2 tsp cornstarch in the base.

Ingredients For lemon bars

2 cflour

1 cbutter
-
1/2 cpowdered sugar

4eggs
-
2 cgranulated sugar

6 Tbsplemon juice, fresh

1 tsplemon zest, grated

4 tspflour

1 tspbaking powder
How To Make lemon bars

1Crust: Cream together the 2 C. flour, butter and confectioners sugar until well blended. Press into bottom of lightly greased 9x13 pan. Bake at 350 for 20 minutes until lightly golden.

2Base: Mix together all remaining ingredients until well blended. (I use fresh lemon juice because I am zesting the peel anyway)

3Pour Base ingredients over baked crust and continue baking an additional 25 minutes.

4Remove from oven and while still warm lightly sprinkle with additional confectioners sugar, Just a light dusting will do.
