I had leftover butterscotch chips and toffee bits so I whipped these up today. I couldn't think of a name for them... :-D Toffeescotch has to be a new word!

Ingredients For oatmeal toffeescotch cookies

  • 1 1/4 c
    flour
  • 1 tsp
    salt
  • 1 tsp
    baking soda
  • 1/4 c
    cocoa powder
  • 1 c
    butter
  • 1 c
    brown sugar
  • 1/5 c
    sugar
  • 2 lg
    eggs
  • 1 tsp
    vanilla
  • 3 c
    old fashioned (or quick) oats
  • 1/2 c
    butterscotch morsels
  • 1/2 c
    toffee bits

How To Make oatmeal toffeescotch cookies

    Preheat oven to 375 degrees.

    Combine first 4 ingredients and set aside.

    Cream butter and sugars until light and fluffy then add eggs and vanilla. Mix until well combined.

    Gradually add flour mixture, then oats. Once mixed, fold in butterscotch morsels and toffee bits.

    Drop by tablespoons or use a dough scoop on a greased cookie sheet or use parchment paper. Place in oven and bake for about 12 minutes or until cookies are set.

    Let sit for 5 minutes then transfer to cooling rack to cool completely.
