I bake for a program called Hopes Table at my church. For the past 2 years I have baked goodies for them. I have found that lemon is very popular it has such a fresh taste. So I am always thinking up new goodies for all my friends at Hopes Table. Hope you enjoy this recipe too!

Ingredients For lemon streusl brownie

  • 3/4 c
    all purpose flour
  • 3/4 c
    sugar
  • 1/4 tsp
    salt
  • 1/2 c
    butter, unsalted
  • 2 lg
    eggs, room temp is best
  • 2 Tbsp
    lemon juice (i prefer meyer lemons0
  • 2 Tbsp
    lemon zest
  • STREUSL TOPPING
  • 3 Tbsp
    unsalted butter
  • 5 Tbsp
    flour
  • 1/4 c
    sugar
  • 1 Tbsp
    lemon zest
  • 1 tsp
    lemon juice
  • LEMON COCONUT TOPPING
  • 3/4 can
    angel flake coconut
  • 2 tsp
    lemon juice
  • 3/4 c
    vanilla chips

How To Make lemon streusl brownie

  • 1
    Preheat oven to 350 and spray no stick in a 8"x 8' baking pan. i use the flour no stick spray.

    Beat first 4 ingredients together till well creamed with mixer In combine eggs lemon juice and zest together in a small mixing bowl and wisk together. Add to first 4 ingredients and beat on medium speed for 2 minutes. Pour batter into baking pan and prepare toppings as follows.

    Now combine butter, flour and sugar and using a fork blend it together, you want it to crumble easily you may need a little additional flour. Add lemon zest and lemon juice than lightly crumble over the top of the batter.

    In another bowl lightly toss coconut and lemon juice togeheer and sprinkl over, finely sprinkle vanilla chips over the over the top of the coconut and bake for 22- 25 minutes. Till edges are a light golden brown.
