the last minute birthday hit!

My good friend's mother had been in assisted living for several weeks and my friend's birthday came the day after Christmas. With her going there every day, all day, I didn't want her b'day to go unnoticed. I promised to be there with her on that day to bring the cookies I had made the day before for her mother to enjoy but just couldn't let this day go by without making her a birthday cake. I quickly checked my pantry for some simple ingredients to throw together and this is what I came up with which was a SMASHING HIT with EVERYONE!

Ingredients For the last minute birthday hit!

  • 1 box
    pound cake mix
  • 1 can
    chocolate pudding pie filling
  • 1 can
    frosting of your choice (i used a fluffy white)

How To Make the last minute birthday hit!

    Preheat the oven to the temperature listed on the cake box. Prepare the boxed cake mix as directed
  • 2
    Using a Bundt pan (well greased & flowered) pour 1/2 of the batter into the pan & place in heated oven for 8 min.

    Remove from oven and gently add the pudding mix Now add the rest of the cake batter & put back in oven for the rest of the baking time indicated on the box (test the top portion of the cake with a toothpick)

    Remove from oven and place on a cooling rack While still warm(ish) add the topping I hope you get as many compliments as I have as well as preparing an "instant fav" for everyone! (It goes really fast)
