4eggs

2 csugar
-
2 ccanola oil
-
2 tspvanilla

2 cflour
-
2 tspbaking soda

2 tspcinnamon

1/2 tspginger
-
1/2 tspallspice, ground

1/2 tspsalt
-
3 cshredded, peeled, sweet potatoes ( about 2 med)

1 cwalnuts,chopped
-
frosting:
-
1 pkg8oz. cream cheese
-
1/2 cbutter, softened
-
1 tspvanilla
-
2 cconfectioners' sugar
How To Make billie's southern sweet potato cake

1Preheat oven to 350* Grease a 9x13 inch pan.

2In a large mixing bowl, beat eggs, sugar, oil and vanilla until well blended. In another bowl, whisk flour, baking soda, salt, and spices; gradually beat into egg mixture. Stir in sweet potatoes and walnuts

3Transfer to a prepared pan. Bake 40-50 minutes or until a toothpick inserted into the center comes out clean. Cool completely in the pan on a wire rack.

4In a small bowl, beat cream cheese, butter and vanilla until well blended, add in the confectioner's sugar beating well until smooth, Spread over cooled cake... and refrigerate. Enjoy!
