These Bacon, Beer and Potato Chip Cookie Bars are one crazy pan of bars, full of sweet and salty flair and all your favorite munchie-food guilty pleasures! They are perfect for Father’s Day, aren’t they?! I mean what dad wouldn’t love to have a few of his favorite foods baked into a chocolate chip cookie? Mine would! I actually wanted to call this recipe “Man Bars.” When I told the Bubba that they were man bars, he said the only thing they were missing was motor oil. Yuck!!!

Ingredients For bacon, beer and potato chip cookie bars
- COOKIE

3/4 cunsalted butter, room temperature

3/4 cdark brown sugar

1/4 csugar

1 lgegg
-
2 tsppure vanilla extract

2 call purpose flour

1 tspbaking soda
-
3/4 cchocolate chunks or chips

2 slicebacon, chopped
-
2 Tbspbeer (i used yuengling)
- TOPPING

8 1/2 ozkraft caramels (about 27 caramels)

1/4 cbeer
-
3/4 cpotato chips, broken into pieces

1/4 cpretzels, broken into pieces

2 slicebacon, chopped
-
1/2 cpeanut butter chips
-
1/2 cchocolate chips
- CHOCOLATE DRIZZLE

1/4 cchocolate chips

2 tspmilk
How To Make bacon, beer and potato chip cookie bars

1Preheat oven to 350 degrees. Line a 9x9 pan with parchment paper or aluminum foil that sticks up above the edges

2Cream butter and sugar together until light and fluffy, about 3-4 minutes.

3Mix in egg and vanilla extract.

4With the mixer on low speed, add flour and baking soda.

5Stir in chocolate chips, bacon and beer. Dough will be thick.

6Press cookie dough evenly into the bottom of the pan.

7Bake for 22-25 minutes or until the edges are slightly golden.

8Remove from oven and allow to cool in the pan.

9While bars are cooling, melt caramels and beer together in a pan over medium heat.

10Allow caramel to cook on low for about 5-10 minutes.

11Pour caramel mixture over cookie bars and spread evenly.

12Pour potato chips, pretzels, bacon, peanut butter chips and chocolate chips evenly over caramel before it cools and hardens.

13Microwave chocolate chips for chocolate drizzle and milk in a small bowl in the microwave until the milk begins to boil.

14Whisk chocolate until smooth.

15Allow chocolate mixture to cool for about 2 minutes, then drizzle over top of bars.

16Once bars are cool, use parchment paper or foil to lift them out of the pan and cut into squares.
