First I will say this cake is awesome. I used Silk ( coconut milk ) and am not sure if that's what gave it it's tenderness or not, but I'll never make this cake any other way. I may even try it in other cakes as well. The taste of the milk is not prevalent in this cake, it does not over shadow the banana flavor. I could tell by the batter, that this cake was going to be awesome and it was. The family loves the combination of flavors. Wash it down with an ice cold glass milk. Yummm! Update: This was such a hit with my family, made another the next day!

Ingredients For ~ awesome banana / chocolate chip cake ~ cassies

  • 2 1/4 c
    flour
  • 1/2 tsp
    salt
  • 2 tsp
    baking powder
  • 1 1/2 c
    sugar
  • 1/2 c
    softened, butter
  • 2
    large eggs
  • 2 lg
    ripe banana's - mashed
  • 3/4 - 1 c
    milk chocolate chips
  • 1 c
    silk - coconut milk
  • PEANUT BUTTER GLAZE
  • 3 Tbsp
    chunky peanut butter - can use smooth
  • 1/4 - 1/2 c
    confectioners' sugar - depending on the consistency you want
  • 1/2 c
    heavy cream - or more to thin out if need be
  • 1/2 tsp
    vanilla

    Preheat oven to 325 degree F. Spray a 9 inch bundt pan with non stick cooking spray...I use bakers joy. In a bowl, mash banana's. Set aside. In another bowl, whisk flour, salt and baking powder together. Set aside.

    In a large bowl, cream butter and sugar until nice and fluffy. Add one egg at a time, thoroughly combine.

    Next, alternate between flour and milk, ending with flour. Making sure you scrape the sides.

    Fold in the chocolate chips and banana. Incorporating well.

    Spread evenly into prepared pan. I tap the pan a few times on the counter.

    Bake for 55 minutes to 1 hour. I took mine out at 55 minutes. Check with a pick to make sure is completely done.

    Place on cooling rack for roughly 10 minutes. Place serving plate over cake and flip. While the cake finishes cooling, make the glaze, or frost with your favorite.

    Glaze: Place all ingredients in a small bowl and whisk until smooth and your preferred consistency. I used a little more than 1/4 cup sugar and heaped my peanut butter. Thinned out a little more with cream. I spread over cake when it was still a little warm, so would run down the sides some. I then just sprinkled with some extra chocolate chips.
