zucchini cookies

Ingredients For zucchini cookies

• CREAM TOGETHER :
• 2 c

  sugar
• 1 c

  vegetable oil
• 3 lg

  eggs
• 2 c

  grated zucchini
• 2 Tbsp

  concentrated orange juice ; optional
• 2 Tbsp

  vanilla if you don't use the juice.
• SIFT TOGETHER :
• 4 c

  flour
• 1/2 tsp

  baking powders
• 1 tsp

  baking soda
• 2 tsp

  cinnamon
• 1/2 tsp

  ground nutmeg
• 1/2 tsp

  ground cloves ; optional (i leave it out)
• OPTIONAL INGREDIENTS :
• 1 c

  chopped walnuts
• 1 c

  chopped dates or raisins
