triple chocolate cookies

Recipe by

As usual I read the recipe and ignored the amounts! So I used a bag of chocolate chips and a bag of white chips instead of the amounts listed--and they came out GREAT! I have been on a search for years trying to find the chocolate cookies a department store in Rochester sold, and this is pretty close! And being chocolate has my husband sniffing around for a few!

  • 1
Preheat oven to 350 and line cookie sheets with parchment paper

In a bowl over simmering water, melt chocolate chips and then remove from heat. (note-I microwaved for 40 sec. and then kept checking until melted)
  • 3
Sift together flour, cocoa, espresso powder, baking powder and salt

Using electric mixer on medium-high, beat butter and sugar until light, apx. 2 minutes. Then beat in eggs, vanilla. Stir in melted chips. Fold in flour mixture and white chocolate chips

Drop by tablespoonfuls (I use small scoop for smaller cookies) on baking sheets, 2 inches apart. Bake until tops are cracked-about 15 minutes. Repeat with rest of dough
