I'm a BIG fan of pumpkin and this recipe combines my two favorite things in the kitchen :) This makes a LOT of cookies!

Ingredients For pumpkin oat cookies

  • 4 c
    unsifted all-purpose flour
  • 2 c
    quick or old fashioned oats, uncooked
  • 2 c
    butter, softened
  • 2 c
    brown sugar, firmly packed
  • 1
    can solid pack pumpkin (16 oz)
  • 1 c
    semi-sweet chocolate chips or raisins
  • 1 c
    granulated sugar
  • 2 tsp
    ground cinnamon
  • 2 tsp
    baking soda
  • 1
    egg
  • 1 tsp
    salt
  • 1 tsp
    vanilla extract

How To Make pumpkin oat cookies

    Preheat oven to 350 degrees, F.

    Combine the flour, oats, soda, cinnamon and salt; set aside. Cream the butter and gradually add the sugars, beating until light and fluffy. Add egg and vanilla to the creamed butter and sugars and mix well.

    Alternate adding the dry ingredients and the pumpkin, mixing well after each addition. Stir in morsels/raisins. Drop desired cookie size onto lightly greased cookie sheet.

    Bake at 350 degrees F for 20-25 minutes or until cookies are firm and lightly browned. Remove and cool on racks. Yields: 3 dozen cookies, depending on size you desire :)
