pumpkin cookies i (not cakey)

Still hunting out pumpkin cookie recipes, since mine is misplaced. This one is from Allrecipes as well as the first one I posted. Don't over beat this recipe, in order to keep it from being fluffed-up like cake. THERE ARE NO EGGS IN THIS RECIPE.

Ingredients For pumpkin cookies i (not cakey)

  • there are no eggs in this recipe
  • 1/2 c
    shortening
  • 1 c
    white sugar
  • 1 c
    pumpkin puree
  • 1 tsp
    vanilla extract
  • 2 c
    all-purpose flour or unbleached all-purpose flour
  • 1 tsp
    baking powder
  • 1/4 tsp
    salt
  • 1 tsp
    baking soda
  • 1 tsp
    ground cinnamon
  • 1 1/2 c
    butterscotch chips (i will use less chips and sometimes vanilla ones.)
  • other add-ins: raisins, dried cranberries, nuts, other flavor chips or other spices

How To Make pumpkin cookies i (not cakey)

    Preheat oven to 350°F. Grease cookie sheets.

    In a medium bowl, cream shortening and sugar with mixer, but don't over beat. Stir in pumpkin and vanilla with a spoon. And, continue with the spoon.

    Sift together dry ingredients; stir into the creamed mixture. Then, mix in the butterscotch chips. Drop dough by teaspoonfuls, onto prepared cookie sheets.

    Bake 8-10 minutes. Allow cookies to cool for a minute on cookie sheets, before transferring to wire cooling racks. Makes 3 dozen.
