pumpkin cookies

I would take these cookies to work around the holidays. They would disappear. It's an old family recipe from my Great Grandmother. The original called for cooked pumpkin. Now we just use a can.

Ingredients For pumpkin cookies

  • 3 c
    flour
  • 1 tsp
    soda
  • 2 tsp
    salt
  • 2 c
    sugar
  • 1 1/2 c
    shortening
  • 2
    eggs
  • 1 1/2 tsp
    cinnamon
  • 1/2 tsp
    nutmeg
  • 15 oz. can
    pumpkin
  • 3 1/2 c
    oats, quick cooking
  • 1 1/2 c
    walnut pieces

How To Make pumpkin cookies

  • 1
    Combine flour,soda and salt.
  • 2
    Mix eggs, shortening and sugar.
  • 3
    Add flour mixture to egg mixture.
  • 4
    Add remaining ingredients.
  • 5
    Drop by spoonful on a cookie sheet.

    Bake 350 degrees for 12 minutes.
