One day I was in the breakroom at work and in the refrigerator were some bright pink cookies on a plate. I sampled one and thought they were so yummy that I had to find the recipe. I searched on the internet and found this one. It comes from the Betty Crocker kitchen and am looking forward to making them for my family. EXPERT TIPS: If “pinker” color is desired, stir a drop or two of red food color into the dough or frosting…or both! Sprinkle frosted cookies with coarse white or pink sugar.

Ingredients For pink lemonade cookies

  • COOKIES
  • 1 pkg
    (1 lb.1.5 oz) betty crocker® sugar cookie mix
  • 1/2 c
    butter, softened
  • 1
    egg
  • 1/4 c
    all purpose flour
  • 1/4 c
    frozen (thawed) pink lemonade concentrate
  • FROSTING
  • 1/4 c
    butter, softened
  • 2 c
    powdered sugar
  • 3 - 4 Tbsp
    frozen (thawed) pink lemonade concentrate

How To Make pink lemonade cookies

    Heat oven to 375°F. Line cookie sheet with cooking parchment paper.

    In large bowl, mix all cookie ingredients with electric mixer on medium speed until well blended. Onto cookie sheet, drop dough by rounded teaspoonfuls.

    Bake 9 to 11 minutes or just until edges begin to brown. Cool 1 minute; remove from cookie sheet to cooling rack. Cool completely, about 20 minutes.

    In medium bowl, mix 1/4 cup butter, the powdered sugar and 3 tablespoons lemonade concentrate with electric mixer on low speed until smooth. Add remaining 1 tablespoon concentrate, 1 teaspoon at a time, if needed for desired consistency. Frost cookies.
