peanut butter chews / peanut butter bars

If you attended San Diego City Schools from the 70's through the 90's chances are you're familiar with these bars. I've searched for this recipe for many years and now that I've found it I'm sharing it with the WORLD! I often make these for parties and fundraisers and they're the first to go.

Ingredients For peanut butter chews / peanut butter bars

  • 1 c
    softened butter
  • 3/4 c
    creamy peanut butter
  • 1 c
    sugar
  • 1 1/2 c
    firmly packed brown sugar
  • 2 lg
    eggs
  • 1 tsp
    real vanilla extract
  • 2 c
    all purpose flour
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 2 c
    quick cooking oats
  • FROSTING (AS PICTURED)
  • 2 c
    confectioners' sugar
  • 3 Tbsp
    creamy peanut butter
  • 1 tsp
    real vanilla extract
  • pinch
    salt
  • 3-4 Tbsp
    milk
  • GLAZE (ORIGINAL RECIPE)
  • 1/2 c
    confectioners' sugar
  • 3 tsp
    creamy peanut butter
  • 1-2 Tbsp
    hot water

How To Make peanut butter chews / peanut butter bars

    Grease half sheet jelly roll pan / cookie sheet (with sides) and preheat oven to 350F. Mix butter, sugars and peanut butter until smooth and creamy. Add eggs and vanilla and continue to mix until well incorporated.

    In a separate bowl sift flour, salt, and baking soda. Gradually combine with butter mixture ensuring it is mixed well.

    Fold in the oats.

    Press dough into pan and bake for 25 minutes or until the edges are golden brown. Do not over bake.

    While waiting, prepare the frosting. For either the glaze or frosting, toss all the ingredients into one bowl and mix well. Set it aside while the chews are baking. Once the chews are done baking allow to cool for ten minutes then glaze/frost while warm. Cut into bars when completely cooled.

    Yields approximately 24-32 bars. Stays well for up to a week refrigerated in a tightly sealed container.
