This recipe combines three of my favorite things in the world: cookies, PB&J and granola! There is so much flavor packed into each and every bite you just can't stop eating them! The best part about this recipe... it's healthy! That's right, these little bundles of joy are packed with whole grains, protein and healthy fats to get you, and your whole family, off on the right foot. Enjoy!

Ingredients For pb&j cookie bars

  • 1 1/2 c
    whole wheat pastry flour
  • 1 c
    rolled oats
  • 1 tsp
    baking soda
  • 1/4 c
    natural peanut butter
  • 1 lg
    egg
  • 1 c
    brown sugar, lightly packed
  • 1/4 c
    milk (soy, cow, almond, rice, or hemp)
  • 1 tsp
    vanilla extract
  • 10 oz
    frozen strawberries
  • 1 md
    apple
  • 1/4 c
    raw sugar
  • 2 c
    plain jane peanut butter granola

How To Make pb&j cookie bars

    Preheat the oven to 375. Grease a 13x9 baking dish. In a large bowl beat together the egg, peanut butter, brown sugar, milk, and vanilla until smooth. Add the remaining cookie ingredients and mix until the dough forms a ball and all of the flour is worked into the mixture but do not over mix it. The dough will be sticky.

    Spread the dough onto the pan. It will not cover the entire bottom. The cookie will spread out when it bakes but try to spread the dough as evenly as possible. Bake for 25 minutes or until the top is golden brown.

    While the cookie is baking, heat the strawberries and apples in a sauce pan. Bring the mixture to a boil, make sure the strawberries are broken down (which can be done with a wooden spoon) and add the sugar if desired. Boil the mixture for 5-8 minutes. Let the mixture cool on the stove.

    Let the cookies cool for 5 minutes. Spread the cooled fruit mixture evenly over the cookie and top with the granola.
