Ingredients For oregon filbert cookies

  • 1/2 c
    butter or margarine
  • 1/2 c
    granulated sugar
  • 1
    egg
  • 1/2 tsp
    vanilla
  • 1 1/2 c
    minus 1 tablespoon all-purpose flour
  • 1/2 tsp
    cinnamon
  • 1/2 tsp
    baking soda
  • 2
    squares semi-sweet chocolate, chopped
  • 2
    dozen filbert nuts, toasted and skinned

How To Make oregon filbert cookies

    **Tip** Toast filberts for 10 to 15 minutes at 350 degrees until skins crack and flake. Place filberts in a kitchen towel and let steam for 5 minutes. Rub filberts with towel to remove skin. Some skin will remain on the filberts and that's okay. It will just make the cookie look more pretty. :)

    Cream the butter and sugar until light and fluffy. Beat in the egg and vanilla.

    Combine the flour, cinnamon, baking soda in a separate bowl. Combine dry ingredients with the wet mixture into thirds. Beating well after each addition. Stir in the chocolate.

    Shape dough into 1 inch balls. It helps to have your hands lightly floured. Place on a greased cookie sheet. Place a filbert into each cookie.

    Bake cookies for 10 minutes at 350 degrees or until lightly browned. Cool for a minute before removing cookies onto rack to cool completely. Store in an airtight container.
