This recipe has been in the family for years. I remember making them in the 1960's. They are so good.

Ingredients For old-fashioned pineapple cookies- grandma's

  • 1/2 c
    shortening
  • 1/2 c
    brown sugar
  • 1/2 c
    sugar
  • 1
    egg
  • 2 c
    flour
  • 2 tsp
    baking powder
  • 1/4 tsp
    baking soda
  • 1 c
    crushed pineapple , drained, reserve 3 tablespoons juice for icing
  • 2/3 c
    chopped walnuts
  • 1/4 tsp
    salt
  • 1 tsp
    vanilla
  • ICING:
  • 1 1/2 c
    powdered sugar
  • 3 Tbsp
    pineapple juice

How To Make old-fashioned pineapple cookies- grandma's

    Preheat oven to 350. Cream shortening and sugars together. Add egg and mix well. Add dry ingredients and mix well Add drained pineapple and mix well. Add nuts and flavoring, mix well. Drop by spoonful onto greased baking sheet. Bake for 15-20 minutes.

    Cool cookies on wire racks. Mix powdered sugar and reserved pineapple juice to make icing. Drizzle icing on cooled cookies.
