Ingredients For oatmeal raisin cookies by rose

  • 1 1/4 c
    packed brown sugar
  • 1/2 c
    shortening
  • 1/4 c
    butter softened
  • 1/4 c
    water
  • 1
    extra large egg
  • 1 1/2 tsp
    vanilla
  • 3 c
    uncooked quick oats
  • 1 c
    flour
  • 1/2 c
    flaked coconut
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    cinnamon
  • 1/2 tsp
    salt
  • 1/2 c
    chopped walnuts
  • 1 c
    sun maid baking raisins

How To Make oatmeal raisin cookies by rose

    Heat oven to 375. Lightly grease cookie sheets. In a large bowl combine sugar, shortening, butter, water, egg and vanilla. Beat medium speed. Add oats, flour, coconut, baking soda, cinnamon and salt, beat at low speed until soft dough forms. Stir in raisins and walnuts. Drop by heaping tablespoon 2 inches apart on prepared cookie sheet. Bake 8 to 10 minutes or until golden brown. Cool completely before storing. Can be frozen also.

    I stress Sun Maid Baking Raisins because they are especially moist if you can't find them then I soak golden raisins in warm water. The baking raisins make a difference in the moisture.
