My parents came from the Netherlands to the US in the late 50's. I grew up with Dutch food which is very peasant, but the pastries and cookies are something else. My mother always made these at Christmas time. They are very simple and have a delightful spice flavor.

Ingredients For jan hagel cookies (dutch holiday)

  • 1 c
    butter, room temperature
  • 1 c
    white sugar
  • 1
    egg yolk
  • 1
    egg white
  • 1 pinch
    salt
  • 2 c
    all purpose flour
  • 1/2 tsp
    cinnamon
  • 1/2 tsp
    vanilla extract
  • 1/2 c
    sliced almonds

    Preheat oven to 300 degrees.

    Cream shortening, add, sugar, egg yolk, cream well.

    Add vanilla.

    Add dry ingredients gradually.

    Knead dough a bit and then divide into two equal portions.

    Lightly grease 2 cookie sheets.

    Using your hands, spread the dough into an even layer on the sheets. (I use a rolling pin at the end to smooth it out.)

    Brush with egg white diluted with a little water. Sprinkle with almonds.

    Bake 20 minutes, 30 for thicker cookies. Cut on diagonal to create diamond shaped cookies within minutes of removing from oven.
