gluten free oatmeal toffee cookies

I found this recipe on my Gluten Free Oatmeal bag, I made a couple substitutions and posted it here so I wouldn't lose it but I have not tried it yet. If you decide to try it out before I do, let me know what you think!

Ingredients For gluten free oatmeal toffee cookies

  • 1/2 c
    brown sugar
  • 1/2 c
    granulated sugar
  • 1/2 c
    coconut oil
  • 1
    egg
  • 1 tsp
    vanilla
  • 2 tsp
    water
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    baking powder
  • 1/2 tsp
    sea salt
  • 1 tsp
    xanthan gum
  • 1 c
    gluten free glad flour*
  • 1 1/2 c
    gluten free rolled oats
  • 1 c
    toffee baking bits

How To Make gluten free oatmeal toffee cookies

    Sift together dry ingredients, except oats and toffee bits and set aside.

    Cream coconut oil and sugars together. (Depending on the temperature in your kitchen you may need to warm or cool your coconut oil)

    Add egg, vanilla and water and mix until well blended.

    Add flour mixture and mix until just combined.
  • 5
    Stir in oatmeal and toffee bits.

    Cover Cookie sheet with parchment paper and place rounded balls of dough about 3 inches apart on the sheet.

    Bake at 350F for 10-12 minutes. Allow to cool before removing from sheet. This makes 3 dozen cookies.
