This recipe has been in our family for a long time and is a big favorite. Eva was my grandmother's sister-in-law and she was a very good cook. Lots of recipes in Gramma's cookbook, written in her own handwriting on backs of envelopes, start out with "Eva's Good ...." and date back to the early 1930's. These cookies are for people, not animals, and were used in our family for cut-out cookies at Christmas time. Butter flavored shortening will ruin them, they just do not taste the same. These cookies keep well, and also ship well if you make them small and pack them carefully!

    sugar
  • 1 c
    brown sugar
  • 1 c
    vegetable shortening
  • 2 lg
    eggs
  • 1 tsp
    baking soda
  • 1/2 c
    hot water
  • 1/4 c
    honey
  • 5 c
    flour
  • 1 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1 tsp
    pure vanilla extract
  • 1 tsp
    pure lemon extract
  • ROYAL ICING
  • 1 lg
    egg white
  • 2 tsp
    water
  • 1/2 tsp
    pure vanilla extract
  • 1/2 tsp
    pure lemon
  • 1 c
    powdered sugar

How To Make eva's good white cookies for animals

    Cream shortening and sugar. (OK to use half plain shortening and half real butter!) Beat in eggs. Dissolve baking soda in hot water and add to creamed mixture. Add honey, baking powder, salt, and flavoring extracts and beat well. Add flour one cup at a time until dough is fairly stiff, it will be a sticky dough. Chill until firm. Roll out on floured board to desired thickness - 1/4 inch works well - and cut into desired shapes with cookie cutters. Bake at 375 for 5 to 7 minutes until only lightly browned. Cool and then ice with the royal icing or enjoy plain.

    To make icing, beat egg white with water until stiff, add flavorings, mix in powdered sugar until of spreading consistency. This dries hard and cookies can be stacked to store.
