date-nut spice delights

This recipe is another one of my favorites to make at Christmas, and have been making these for over 20 years, and even though it seems to have a lot of ingredients, there are so very easy to make, and great for kids to help with, not to mention the wonderful smell of the spices filling up your whole house!

Ingredients For date-nut spice delights

  • 2/3 c
    molasses
  • 1 c
    sugar
  • 2
    eggs, seperated
  • 1/2 c
    butter, melted
  • 2 1/2 tsp
    cinnamon
  • 1 1/2 tsp
    ginger
  • 1 tsp
    allspice
  • 1 1/2 tsp
    baking soda
  • 1 1/2 tsp
    baking powder
  • 1/2 c
    water
  • 5 c
    flour
  • 1/2 c
    chopped walnuts
  • 1/2 c
    chopped pecans
  • 1
    pitted chopped dates
  • 3 c
    powdered sugar
  • 4 tsp
    light corn syrup

How To Make date-nut spice delights

    Preheat oven to 350 degrees. Lightly grease 2 large(depending on oven size, will need to bake in several batches) cookie sheets with baking spray.

    In large bowl of stand mixer, beat 2/3 cup molasses, 1 cup sugar, 2 egg yolks, 1/2 cup melted butter, 2 1/2 teaspoons cinnamon, 1 1/2 teaspoon ginger, 1 teaspoon allspice,1 1/2 teaspoon baking soda, 1 1/2 teaspoon baking powder, and 1/2 cup water until well incorporated.(about 3 minutes) Gradually beat in flour just until blended; stir in nuts and dates.

    Shape heaping teaspoons into approximately 1 inch balls.(can make larger or smaller depending on preference) Place cookies 1 inch apart onto prepared cookie sheets. Bake 13-15 minutes, until top of cookie feel firm. Cool on racks.

    To make frosting: In medium bowl, using hand held mixer, beat 3 cups powder sugar, 4 teaspoons light corn syrup and reserved egg whites together until fluffy. Spoon on top of cookies. Store in cookie tins or airtight containers.
