Mom made these when we were kids in the '60s. I loved learning to measure and helping mom. Loved smelling them baking, but mostly loved eating them!

Ingredients For congo cookies

  • 2/3 c
    butter, melted
  • 1 lb
    light brown sugar or 2 1/4 cups
  • 3
    eggs
  • 2 3/4 c
    all purpose flour
  • 2 1/2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1 tsp
    vanilla
  • 1 c
    pecans, chopped
  • 1 pkg
    semi-sweet chocolate chips

How To Make congo cookies

    Preheat overn to 350 deg. Melt butter, add sugar. Beat until well blended. Add eggs and beat until smooth. Let cool.

    Mix dry ingredients: flour, baking powder, salt. Add to butter mixture and stir well. Add vanilla, chopped pecans and nuts.

    Grease and flour, or line pan with parchment paper. 13 1/2 x 15 x 2" pan at 350 deg for 35-45 min.

    While warm cut into finger-length bars. Makes 35.
