Ingredients For coconut citrus bars

  • 3/4 c
    butter, softened
  • 1/3 c
    confectioner's sugar
  • 1-1/2 c
    all-purpose flour
  • 1/2 c
    crisp rice cereal
  • FILLING:
  • 4
    eggs
  • 1-1/2 c
    granulated sugar
  • 1 c
    coconut, sweetened and flaked
  • 1/3 c
    orange juice
  • 1/4 c
    lemon juice
  • 2 Tbsp
    lime juice
  • 2 Tbsp
    all-purpose flour
  • 3 tsp
    orange zest, grated
  • 2 tsp
    lemon zest, grated
  • 1-1/2 tsp
    lime zest, grated
  • confectioner's sugar

How To Make coconut citrus bars

    In small bowl, cream butter and confectioner's sugar until light and fluffy; gradually beat in flour until crumbly. Stir in cereal. Press into a greased 13" X 9" baking pan. Bake at 350° for 16-22 minutes or until lightly browned.

    Meanwhile, in large bowl, beat eggs, sugar, coconut, juices, flour and citrus zests at high speed until frothy. Pour over hot crust. Bake for 18-25 minutes or until lightly browned. Cool on wire rack. Dust with confectioner's sugar and cut into bars. Store in refrigerator.
