Ingredients For carrot cookies

  • 2
    eggs
  • 2/3 c
    shortening
  • 1 pkg
    orange cake mix
  • 1/2 c
    carrots, finely shredded
  • 1/3 c
    raisins

How To Make carrot cookies

    Beat eggs, shortening and half of the dry cake mix until smooth. Stir in remaining cake mix, the carrot and raisins. Mix well.

    Drop dough by rounded teaspoon about 2 inches apart onto greased baking sheet. Bake at 375 for 10-12 minutes. Immediately remove from baking sheet. Cool. Frost if desired.
