This recipe is one from a cookbook published by a church in the 1960's in my hometown. It's a simple recipe but a good one! I did add the spices but it's a great recipe with or without them.

Ingredients For autumn oatmeal crisps

  • 1 c
    all purpose flour
  • 3 c
    oats
  • 1 tsp
    baking soda
  • 1 tsp
    cinnamon
  • 1 c
    sugar
  • 1 c
    brown sugar, packed
  • 1 c
    shortening
  • 1 tsp
    imitation vanilla
  • 2 lg
    eggs
  • FOR ROLLING:
  • 2 Tbsp
    sugar
  • 1 tsp
    pumpkin pie spice

How To Make autumn oatmeal crisps

    Combine flour, oats, soda, and cinnamon in mixing bowl; set aside. Cream sugars, shortening, and vanilla. Beat in eggs. Gradually add dry ingredients and mix until well blended. Refrigerate dough until chilled or overnight.

    Preheat oven to 350 degrees. Line cookie sheets with parchment paper. In small bowl, combine the sugar and pumpkin spice for rolling. Using 1 tablespoon each, shape dough into balls. Roll in sugar mixture and place on cookie sheets about 2" apart. Flatten balls with a fork.

    Bake 10 minutes. Remove from oven and cool cookies on cookie sheet for 2 minutes. Remove to wire rack and cool completely. Makes 4 dozen.
