I stumbled on these while trying to make the perfect shortbread and thumbprint cookie. I used apple jelly only because I had run out of raspberry and strawberry preserves. The apple were the best ones!

Ingredients For apple delight cookies

  • 1 c
    butter, softened
  • 1/2 c
    powdered sugar
  • 1/2 c
    brown sugar, light
  • 1 lg
    egg
  • 1/2 tsp
    pure vanilla extract
  • 1/2 tsp
    almond extract
  • 2 1/2 c
    flour
  • 1/2 c
    apple jelly
  • 1/4 c
    powdered sugar

How To Make apple delight cookies

  • 1
    Preheat oven to 350 degrees.

    Cream together the butter, 1/2 cup powdered sugar, the brown sugar, egg and extracts.

    Add in flour.
  • 4
    Drop by full tablespoons onto baking stone or greased cookie sheet.

    Press into the middle of each cookie to form a tiny cup for the jelly.

    Add jelly to the center of each cookie.

    Bake for 15 minutes or until cookies just begin to turn golden.

    Once cooled completely, dust with remaining powdered sugar.
