anzac biscuits

This cookie was made famous during World War II when care packages for the Australia New Zealand Army Corp (ANZAC) were sent to the troops. The shelf life is longer due to not having eggs and it's worth it to either purchase the Lyle's Golden Syrup either at your grocery or online! It DOES make a difference (because I've tried with a substitute and the real thing)!

Ingredients For anzac biscuits

  • 2 c
    all purpose flour
  • 2 c
    old fashioned oats
  • 2 c
    granulated sugar
  • 1 c
    coconut, flaked
  • 1 c
    unsalted butter
  • 2 Tbsp
    lyle's golden syrup (worth finding & purchasing)
  • 3/4 tsp
    baking soda
  • 1/4 c
    boiling water

How To Make anzac biscuits

    Preheat oven to 350 degrees. Line cookie sheets with parchment paper and set aside. In a large bowl combine flour, oats, sugar and coconut. Set aside. In a small saucepan over medium heat, melt butter with Lyle's Golden Syrup. Dissolve baking soda in boiling water and add to butter mixture. Stir to combine. (Be careful...if butter mixture is hot the addition of the baking soda/boiling water will bubble up considerably) Add butter mixture to dry ingredients and stir well to combine. (if a bit crumbly, I've added a sprinkling of hot water to moisten) Drop (or scoop) onto prepared baking sheets about 2" apart (making sure to scoop and pack lightly so your dough doesn't crumble). Flatten cookies slightly with the heel of your hand. Bake until golden brown and firm but not hard, about 15 minutes (check after 10). Transfer to wire racks to cool completely. Yield: Approximately 3-4 dozen
