i ennjoy making these little twice baked cookies(hence the name biscotti)at the holidays and giving them as gifts. goes great with hot chocolate or your favorite coffee. enjoy and happy baking!!

Ingredients For almond biscotti

  • 1 c
    blanched whole almonds(toasted & chopped)
  • 1 tsp
    baking powder
  • 1/8 tsp
    salt
  • 2 c
    all purpose flour
  • 3/4 c
    granulated sugar
  • 3 lg
    eggs
  • 1 tsp
    pure vanilla extract
  • 1/2 tsp
    pure almond extract

How To Make almond biscotti

    preheat oven to 350 degrees. toast almonds for 8 to 10 minutes or until lightly fragrant. let cool and then chop coursely and set aside. reduce oven to 300 degrees and line a baking sheet with parchment paper. in a small bowl beat the eggs and egxtracts together. set aside in a large bowl on your electric mixer(or hand mixer) combine flour, sugar, baking powder, and salt. mix ingredients thouroughly. gradually add egg mixture and beat until a dough forms adding almonds halfway through. on a lightly floured surface roll dough into a log 14 inches long and 3 to 4 inches wide. put on baking sheet and bake for 30 to 40 minutes or until firm to the touch(log will spread during baking). remove log and put on cooling rack for about 10 minutes transfer log to a cutting board using a serrated knife cut log diagonally about 1/2 inch apart. arrange on a baking sheet bake 10 minutes then turn slices over and bake another 10 minutes or until firm to the touch. remove from oven and let cool. store in an air tight container

    when logs are cooled melt chocolate and dip one corner of it then lay on sheet to dry. wrap a few up in a pretty bag and give as gifts for the holidays. happy baking!!
