I was experimenting with stove-top cocoa (seeking an alternative to the packet mix and all those nasty additives). The end result is creamy, and thick. I love the body this cocoa has, and it's a satisfying snack that soothes a chocolate craving.

Ingredients For rich dark hot cocoa

  • 1 qt
    organic skim milk
  • 6 Tbsp
    granulated sugar
  • 4 Tbsp
    hershey's special dark cocoa powder
  • 2 Tbsp
    cornstarch
  • 1 Tbsp
    coconut oil
  • 1 tsp
    pure vanilla extract
  • 1/4 tsp
    sea salt

How To Make rich dark hot cocoa

    In a medium saucepan, add the cold milk, coconut oil and whisk in the cornstarch and mix well. Set on medium-high heat. Whisking constantly, add cocoa powder, sugar and sea salt. Continue whisking - bring the mixture up to a moderate bubble, and turn off heat, but leave pot on the burner and continue cooking and stirring. The cocoa will have thickened. Add the vanilla and mix well. Taste the mixture & adjust sugar if needed. To serve, I pour the mixture into a one-quart Pyrex measuring cup to facilitate pouring. Top with marshmallows or whipped cream, if desired.
