This is one of many items that I am making for a Reunion. I chose this recipe not only because it is simple and easy, but because it has so much flavor, just a tad bit of butter makes all the difference. The Madagascar Vanilla Extract also helps. I made 5 batches of this in less than an hour. If you want simple and tasty then this is a great recipe to try. Thank GOODNESS FOR THE MICROWAVE. You will not beleive how good this recipe actually is, & it only takes 10 minutes to make.

Ingredients For 10 minute microwave peanut brittle

  • 1 c
    granuated sugar
  • 1/2 c
    light corn syrup
  • 1 1/2 c
    dry roasted peanuts (salted)
  • 1 1/2 tsp
    butter
  • 1 tsp
    vanilla extract ( i use madagascar)
  • 1 tsp
    baking soda

    Generously butter a cookie sheet with butter. Then set aside. NOTE: Word of caution-MICROWAVES LIKE OVENS VARY IN COOKING DEGREES, temperatures AND LEVELS SOME OF YOU MAY NEED TO ADJUST THE LEVEL OF YOUR MICROWAVE FOR THIS RECIPE. I HAVE NEVER NEEDED TO ADJUST MY MICROWAVE LEVEL SINCE I HAVE BEEN MAKING THIS RECIPE for more than 20 years. MY current MICROWAVE IS A GE ADVANTIUM PROFILE 120, THAT DOUBLES AS A MICROWAVE OR OVEN AND USES 1200 WATTS OF POWER. SO USE YOUR OWN JUDGEMENT.     In a 2 quart microwave safe dish, combine sugar with light corn syrup. Stir to mix and Microwave on high for 4 minutes.

    Stir in peanuts, and microwave on high for 4 more minutes or until lightly brown.

    Stir in butter and Vanilla, blend well, and put back in microwave on high for 2 minutes. Remove and stir in baking soda, and stir gently till light and foamy.

    Pour onto prepared baking pan. Allow to cool for 30 minutes, then break into serving size pieces.
