  • BATTER:
  • 2 c
    all purpose flour
  • 2 c
    granulated sugar
  • 1 c
    margarine
  • 1/2 c
    unsweetened baking cocoa
  • 1 c
    water
  • 2 lg
    eggs
  • 1 tsp
    baking soda
  • 1/2 c
    buttermilk
  • 1 tsp
    vanilla extract
  • FUDGE FROSTING:
  • 1/2 c
    margarine
  • 1/4 c
    unsweetened baking cocoa
  • 1/3 c
    milk
  • 1 lb
    box powdered sugar
  • 1 c
    chopped pecans

    Preheat oven to 350^. Prepare 2 cupcake pans (12 cups each pan) Line each cup with paper liners. Set aside. --- For the Batter: Mix together the sugar and margarine in a large mixer bowl, beating until fluffy. Add eggs one at a time beating well after each addition.

    Combine the water, buttermilk and vanilla in a 2 cup measuring cup. Combine the cocoa, flour and baking soda together. Add flour mixture alternately with the buttermilk mixture, ending with the flour mixture. Mix well.

    Fill cupcake liners equally with the batter and bake for 12-15 minutes. Cool in pans for about 10 minutes then remove to wire rack to frost.

    Fudge Frosting: During the last 5 minutes of baking time for the cupcakes. Combine ingredients in a saucepan and heat until boiling and boil for 1 minute, stirring constantly. Using a soup spoon, spoon the hot fudgy frosting equally over each cupcake. Very Fudgy and you will forget your blues as you eat away the pain and sorrow....BE HAPPY DON'T WORRY!
