I had no frosting or confection sugar to make any... found a way to make a plain cake mix so scrumptious that you won't care that it's not frosted. My youngest son, Shane is picky even though he loves anything sweet. But he loves this and asks me when I'll bake another! So since my sunshine loves it so much and it makes his day brighter, I called it Sunshine Cake.. besides, it is yellow. lol I just LOVE to see people smile. :D

Ingredients For you are my sunshine cake

1yellow cake mix

3large eggs
-
1/3 cbutter, melted and cool

1 cwater
-
1 cancrushed pineapple (drained reserving juice)

2 ccoconut, flaked (divided in half)

1 jarorange marmalade
-
1 cmango daquairi mix
How To Make you are my sunshine cake

1Preheat oven to 350 degrees F. Add one cup of coconut and half of the pineapple to the dry cake mix. Add eggs, water, juice 1 tablespoon of marmalade, and butter. Beat on low then medium speed til evenly mixed. Pour batter into Bundt pan. Drop teaspoonfuls of the marmalade onto batter keeping it in the center. I make sure it is close enough together so no one misses out on the filling, but careful not to make the blobs too heavy. This will keep the marmalade from settling all the way to the bottom of the batter. Sprinkle the other cup of coconut on the cake. :) Bake at 350 for 25 min or til cake springs back when touched.

2Allow cake to cool until just warm and invert onto plate. While cake is cooling stir together 1/2 cup of marmalade and 2 tablespoons of daiquiri mix. Microwave mix for 10 to 15 seconds or until syrupy. Pour over cake. You can add a little crushed pineapple and/or coconut to this mixture for a little more oomph..If you do, add another teaspoon of marmalade. :O the more oomph the better! :D

3To create a sticky crusty layer over the cake, just broil on high on a baking sheet til it bubbles and browns slightly. I do this while keeping my oven door open so that I can see it.. hate to burn something this yummy. And one more thing, it's neat to add slivered almonds to the coating and have them all nice and toasted too!
