Wonderful cake! I've seen this cake called many different things. I just call it what it is. A pineapple orange cake. LOL! I know many of similar recipes are posted on this site, but whats another? I had some mandarins and pineapple to use up. I do have a from scratch version posted, but wanted something easier - so called my mother and sure enough she had this recipe. I hope the delicious picture inspires someone to get out those cake pans,( now that the weather is cooling in most places) and bake your family this delicious cake. Enjoy!

Ingredients For ~ pineapple orange cake ~

  • 1 - 18 1/4 oz
    yellow cake mix
  • 1/3 c
    oil
  • 3
    eggs
  • 1 1/3 c
    water
  • FILLING
  • 8 oz
    softened cream cheese
  • 1 1/2 c
    confectioner's sugar
  • 1 - 20 oz
    crushed pineapple and juices
  • 2 - 8 oz
    cans - drained mandarin oranges
  • 1 - 31/2 oz
    instant vanilla pudding
  • 1 - 8 oz
    tub, thawed whipped topping

How To Make ~ pineapple orange cake ~

    Mix the cake and bake in two - 8 or 9 inch cake pans, according to package directions. Line pans with waxed paper or use bakers joy cooking spray. Remove cakes from pans and cool on rack. Once cool, split each layer in half horizontally, so to end up with 4.

    Filling: In a large bowl, whip the cream cheese until fluffy and gradually blend in the sugar. Stir in the pineapple and juice. Reserve 5 - 6 drained mandarin orange slices and stir in the rest. Next, mix in the box of pudding and then the thawed cool whip.

    Place one layer on a cake plate, cut side up and spread with frosting. ( Make sure you reserve enough frosting for the top and sides of cake.) Place anther layer of cake, cut side down. Spread with more frosting. Repeat with remaining layers, spreading remaining frosting on top and sides of cake. Decorate the top with remaining mandarins. Best served after refrigerating over night. Enjoy!
