I made this for our fundraiser Sunday. It was the first cake to go & everyone thought it was fantastic!!!!!

Ingredients For peanut butter cups cake

  • 1 3/4 c
    water, boiling
  • 1 c
    quick cooking oats
  • 1/2 c
    butter, room temperature
  • 1 c
    brown sugar, firmly packed
  • 1 c
    white sugar
  • 1 tsp
    vanilla
  • 2
    eggs
  • 1 1/2 c
    flour
  • 1/2 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1/4 tsp
    cinnamon
  • 1/4 tsp
    salt
  • 32
    miniture reese cups or 5-.6ounce cups
  • FOR MAKING CAKE
  • 3 Tbsp
    butter
  • 3 oz
    unsweetened chocolate
  • 3 c
    powdered sugar
  • 1/4 tsp
    salt
  • 1/3 c
    milk
  • 1 tsp
    vanilla
  • FOR MAKING FROSTING

How To Make peanut butter cups cake

    Combine water and oats-cool to room temperature. Set aside. Cream butter, sugars and vanilla. Blend in oatmeal mixture. Beat in eggs; combine dry ingredients, add to creamed mixture. Beat 1 minute at medium speed. Pour into greased & floured 9x13 pan. Chop peanut butter cups & sprinkle on top of batter. DO NOT STIR!!!!! Bake at 350 degrees 40-45 minutes. Remove from oven & cool.

    Frosting: melt butter with chocolate; in small pan stir constantly, over very low heat, until melted. Pour into small mixing bowl. Add remaining ingredients-(powdered sugar, vanilla, salt & milk)Beat until well blended. Chill to spreading consistency-10-15 minutes. Frost cake. If there are leftover Reese Peanut Butter Cups, Slice & drop on top of icing. Yummy!!!!!
