When I was little, my mom used to bake us delicious cakes. I enjoyed the great smell and taste. Being around her at that time got me interested in baking and now that I’m grown up I practice baking thanks to the influence I had when I was little. I want my children to have the same experience I had, so I bake them the flavors they love. Knowing they love peanut butter, I decided to bake something with the good flavor of peanut butter with a little mix of Mexican tradition. The combination turned out to be a wonderful idea, which my children truly enjoy.

Ingredients For peanut butter cake - flan

  • 2 c
    granulated sugar
  • 4 lg
    eggs
  • 1 c
    vegetable oil
  • 2 c
    peanut butter
  • 2 c
    all-purpose flour
  • 2 tsp
    baking soda
  • 1 tsp
    baking powder
  • 2 tsp
    vanilla extract
  • 1 c
    chopped peanuts
  • 1/2 c
    caramel for ice cream
  • FOR THE FLAN:
  • 1 can
    evaporated milk
  • 1 can
    condensed milk
  • 1/4 c
    peanut butter
  • 5 lg
    egg yolks
  • 2 lg
    whole eggs

How To Make peanut butter cake - flan

    PREHEAT THE OVEN AT 350ºF. Grease a floured one 12"x4" bound cake pan. Pour the caramel into the prepared pan.

    Sift the flour three times and add the baking soda, baking powder and sift again one more time.

    In the bowl of an electric mixer, beat the oil, peanut butter, eggs, salt and sugar until you reach a fluffy consistency. Add the flour in thirds and mix well. Pour into the pan.

    For the flan: In a blender, mix all ingredients together. (Or use a large bowl and a whisk.) Pour into the pan (over cake batter.)

    If you don't have a Bain Marie (bano maria), you can make your own by placing the bundt pan into a larger pan filled with water. Bake the cake for around 2 hours (no less than 2 hours because the cake and the flan need that time to bake well.)
