Had a few organic peaches, and wanted to do something with them. This is what I came up with… Peaches in a muffin tin. So, you ready… let’s get into the kitchen.

Ingredients For peachy muffins

  • 1/2 c
    light brown sugar, packed
  • 1/2 c
    flour, all purpose variety
  • 1 tsp
    baking powder
  • 1 pinch
    salt, kosher variety
  • 1/2 can
    milk, whole fat
  • 3 Tbsp
    sweet butter, unsalted
  • 2 md
    peaches, skins removed, quartered and chopped
  • fresh cinnamon, to taste
  • light brown sugar, to taste

How To Make peachy muffins

  • 1
    Gather your ingredients.

    Add the milk, brown sugar, flour, baking powder and salt to at bowl.

    Mix to combine, and reserve.
  • 4
    Place a rack in the middle position, and preheat the oven to 370f (187c).
  • 5
    Add 1/2 tablespoon of butter to the bottom of the muffin tins.

    Chef’s Note: I’m using paper muffin cups, but that’s not necessary.

    Place the muffin tin in the oven, for five minutes.

    Remove from the oven with the melted butter.
  • 9
    Divide the flour mixture between the 6 muffin tins.

    Add the peaches to the tins.
  • 11
    Add some brown sugar, and cinnamon to the top of each muffin.

    Place into the oven, and bake for about 25 minutes, or until nicely browned.

    Allow the muffins to cool, and then serve while still warm. Enjoy.
