    nilla wafers
  • 2 - 8 oz. pkg
    cream cheese
  • 1/2 c
    sugar
  • 1 tsp
    pure vanilla extract
  • 2
    eggs
  • pie filling, your choice, optional

How To Make *** mom's mini cheesecakes ***

    Preheat oven to 325 degrees F.

    Line mini muffin tin with foil liners.

    Place 1 nilla wafer in each liner. Mix cream cheese, vanilla & sugar at medium speed; blend well. Add eggs, one at a time, mix well. Pour over wafers (only fill to 3/4 full). Bake 25 minutes. Cool completely. Add fruit pie filling, if desired.
