Ingredients For lazy daisy oatmeal cake

  • 1 1/4 c
    boiling water
  • 1 c
    oatmeal, uncooked
  • 1/2 c
    butter, softened
  • 1 c
    sugar
  • 1 c
    packed brown sugar
  • 1 tsp
    vanilla extract
  • 1 1/2 c
    all purpose flour
  • 1 tsp
    baking soda
  • 1/2 tsp
    salt
  • 3/4 tsp
    cinnamon, ground
  • 1/4 tsp
    nutmeg
  • 1/2 c
    raisins, optional
  • 2
    eggs
  • FROSTING
  • 1/4 c
    butter, softened
  • 1/2 c
    brown sugar, lightly packed
  • 3 tbsp
    whole milk
  • 1/3 c
    chopped walnuts
  • 3/4 c
    shredded coconut

How To Make lazy daisy oatmeal cake

    Preheast oven top 350 degrees. Soak oatmeal in boiling water for 20 minutes. Cream butter, add sugars and beat until fluffy. Add vanilla and eggs, blend. Add oatmeal and beat well. Sifh\t dry ingredients together and add to oatmeal mixture. mix well. bake in 9x9 square pan 50-55 minutes.

    Combine frosting ingredients in saucepan over medium heat. Spread over hot cake. Put under broiler until lightly browned, about 2-3 minutes.
